Quick quinoa burgers

The first time you try quinoa you will like it so much you will have it again the next day or...never have it again. Such is life, with the exception of chocolate most foods have lovers and haters. I have published other quinoa recipes before: 3 flavor quinoa, quinoa and green beans, quinoa with beans and bacon and tabbouleh salad with quinoa.

I happen to really like quinoa as it gives great satiety with very little calories to match and unlike pasta you don't feel like you need to have more and more if it. The texture is very light and the flavor is nutty, what's not to like?

My client Mary sent me a quinoa burger recipe weeks ago that I lost, so I made my own version that I hope you enjoy as much as I did.

Serves 2 generously

1 1/2 cups quinoa, boiled, drained
2 large carrots, grated
1 spring onion, chopped
1/2 cup parsley, chopped
1/4 cup oat bran
1/2 cup grated cheese (jack, swiss, gouda or emental)
1 egg
1 tbsp cumin (ground)
1 tsp black pepper
1 tbsp rice oil or butter

Preheat the oven to 400 F (200C). Meanwhile in a pan, heat the oil and cook the chopped onion and carrot. When slightly soft, set aside and in a bowl, mix with the rest of the ingredients. Shape burgers and bake for 25 minutes on top of a baking sheet lightly sprayed with oil. Enjoy warm or cold (I prefer them cold) and make everyone jealous by taking some to work with you the next day. This recipe also packs an astonishing amount of fiber, around 7 grams per serving.

  1. interesting. I make a quinoa/butternut squash/beets dish for Luke and we all love it. I may have to try this too.

  2. I like that they feed kids quinoa these days. Here, buckwheat and plums is my favorite combo for kids food.

  3. I love quinoa!!! Have to try this!

  4. I made these today and wow, I had to stop myself from eating all of them. Delicious :)

  5. I am so glad you did. I ate all of mine, everything was just fine. ;)

  6. Inspired by the recipe, I bought quinoa today! Is it 1 and 1/2 cup after being boiled or before? I suppose after...

  7. Yes dear, after.
I am so happy you will be having them soon ;)

  8. The burgers are lovely! :) So tasty and filling! I left some mixture to do more for my dinner today. And, btw, even though there is no meat in them, it feels as if there was - the texture and the flavours resemble a little the meat balls :).

  9. YUM! this looks wonderful! as a vegetarian I'm always looking for ways to get all my nutrients. I will have to pass this to my sister as well.

  10. Please be my guest. We just got done with the photo shoots for a collection of vegan recipes, as soon as they are published, I will let you know ;)
    Thanks! Galya
