Do you still have some cooked quinoa in the fridge? It can be used to enhance green beans in a way you've never had before.
This can be it's own dish or a side, and to make it you need:
1 cup cooked quinoa
2 cups boiled and drained green beans
1/2 cup carrot strips
1/2 cup small broccoli flowers
1 tbsp chopped ginger
1/2 tsp black pepper
1/2 tsp sea salt or Himalayan pink salt
1 tbsp butter or ghee
Take a deep pan and melt the butter, cooking the ginger until it's golden and add the black pepper. Follow with the carrots and broccoli and stir. Add the quinoa and beans and stir carefully. Put in 1/3 cup water and salt and cover for 3 minutes.
If you need extra protein, you can add a few cubes of cotija cheese, 2 oz will make at least 8 small cubes. Cook them in a seperate pan with just a dab of butter and add to the pot of veggies and qiunoa seconds before you take it off the heat.
This could make a great wrap, if you have the freedom of adding some more calories.
