Tabbouleh with a twist

Tabbouleh is one of the most filling salads out there. It has a variety of flavors and never fails to surprise with the options it offers for variations.

In my latest version, I used:

1 cup parsley
1 cup cilantro
2 tomatoes
half a cup of olives
a cup of cold quinoa and amaranth I had left over
half a cup of goat feta
juice of 1/2 lime
1 tbsp olive oil

Chop all veggies and add the olives, seeds and the feta cheese. Drizzle with olive oil and lime juice and stir just once or twice, making sure ingredients don't mix too much.

It's very tasty on its own, but I am sure making a nice tortilla or lavash wrap, would be great too!
