3 flavor Quinoa

Quinoa is an amazing seed, it has a great nutty flavor and high enough protein content to make a satisying breakfast meal. Quinoa takes spices very well, but I like to couple it with ingredients that have enough flavor on their own to overpower the plain nature of quinoa without leaving you with a specific aftertaste, like a spice mixture would.

To make this awesome fruit and nut recipe, you will need:

1 cup of cooked quinoa
handful of pine nuts
1 oz of cubed Cotija cheese (use mozzarella or paneer if you don't have cotija)
2 apricots
1/2 tbsp butter

Melt the butter in a deep pan, add the cotija cheese and apricots and cook them on both sides. Add the pine nuts and quinoa and stir carefully so you don't break the cheese or the apricots.
Put aside to cool off, and enjoy.

For this recipe, I mixed equal amounts of white and red quinoa, and my personal preferences are for the nuttier, more crunchy red variety, but use any quinoa you can get your hands on, for great nutrition, protein and fiber content.

I am tempted to have this breakfast twice today, but something's telling me I will probably end up cooking a quinoa dinner.
