It's time to share this recipe. I've been making it for a few years now and it makes a wonderful late lunch or a larger post workout snack.
1 medium sweet potato, cut in thin strips (use a peeler or a special grater to get chip thin strips)
1 tsp honey
1 tbsp butter
3 slices of ginger, chopped finely
1 cup cottage cheese
Steam the yam for 10 minutes. Set aside to slightly cool off. Meanwhile, melt the butter and cook the ginger over medium heat. When you can smell the ginger and see that it's browning slightly, add the honey and stir well. Turn off the heat, place the cottage cheese on a plate, top with the yam and pour the hot butter honey and ginger mix on top.
