Snow peas and cheddar frittata

It's so easy to have a healthy lunch if you make it yummy. This low carb egg recipe has plenty of crunch and fiber and will satisfy you for hours after your lunch is over.

You need:

1/2 tbsp butter
1/2 cup cut up snow peas
2 eggs
2 oz cheddar cheese
pink salt
fresh ground black pepper
pinch turmeric
4 tbsp plain yogurt

Melt butter in a pan and add the snow peas. Cook stirring vigorously until slightly white on both sides. Add the two eggs and scramble until eggs are not longer runny. Add the cheese on top and when it melts flip the scramble over to turn the cheese into a nice melty crust. When ready, serve and sprinkle with salt and pepper.

On the side, mix a pinch of turmeric with the yogurt and enjoy together with the eggs.
