I got a few nice emails about my mock bread recipe and decided to share a very simple Italian mock bread recipe that I initially used as crust for pizza, but modified the ingredients to make it more pan-friendly

Above are all the ingredients you'll need:
2 eggs
3 tbsp Parmesan cheese (the grated cheaper version is perfect here)
1/3 tbsp butter or cooking spray
1 heaping tbsp oregano
2/3 cup oat bran
1 pinch baking soda
1 pinch sea salt

Mix all ingredients and coat your pan with cooking spray or a dab of butter. Cook evenly on both sides until you get a nice brown crust.

This recipe makes 4 pieces like this, perfect for 2 sandwiches, which could be two meals if you are watching calories. By the way this whole recipe, if you cook with butter, has:

12 grams of fiber is serious and tends to explain why four of those slices will make you forget about food for about 6 hours, especially if you have some meat or cheese with them.
