Caramelized apples and Ricotta
An afternoon snack describes this dish best, with or without a steaming cup of good coffee.
To make this protein rich and creamy snack, you need:
1 apple
3 oz ricotta cheese
1/5 tbsp butter
3 tbsp wheat berries
Heat up a pan and after melting the butter, caramelize apples on both sides, being careful to only cook them until they become slightly transparent. Add ricotta on top, being careful not to move the apples too much. Cook under a lid for 1 minute and add wheat berries. Flip over and cook for another minute. Serve and eat hot or cold.

ReplyDeleteI do a similar thing with poached quince or pear, and cardamom laced, thick yogurt.
Thick yogurt with cardamom sounds sinful. What about cream cheese?
