Blue cheese and Leeks strata
I am always looking for recipes that are good for taking with me to work. Most times I just cut fritattas, stratas and quiche in pieces and seal in ziplocks. Now that it's winter, they are great for a quick snack in the car.
To make this easy strata, you need:
2 large stalks of leeks
3 eggs
1/3 cup milk
2 oz blue cheese
2 oz shredded cheese (cheddar, gouda, or any melty cheese would work)
1/2 tbsp olive oil
black pepper to taste
Chop the leeks and saute them in a pan with the olive oil and black pepper, while you warm up the oven to C 180-200. Beat the eggs and milk, add the blue cheese, crumbled and the leeks once they turn translucent. Mix all and pour in a pan. Sprinkle the shredded cheese on top and bake for 15 minutes.
Serve with dried tomatoes or have it cold as a snack at work.
