Sundried tomato salmon

This picture says it all and really, to make this salmon all you need is a salmon steak, half a cup of chopped sundried tomatoes and a few rosemary needles.

Heat a pan over medium heat and place the salmon on it, no fat added. You can sprinkle some sea salt and grind fresh white and black pepper to season. Turn over when golden and then add the chopped sundried tomatoes and rosemary. Cook for another 5 minutes, allowing some of the tomatoes to fall aside and cook more. You may use oil packed tomatoes or dried tomatoes that you reconstitute right before cooking. Turn over the fish placing it on top of the tomatoes and cooking all for another minute or two. Serve with the tomatoes in a thick layer over the fish, and choose as plain side such as basmati rice.
