Apple, fig and ricotta cream

My family grows apple trees and every fall we pick more than we can eat throughout the winter. For some reason, they think a girl living alone can eat 5 apples a day, or at least that's how much they send me every few weeks. Needless to say, I have lots of apples that I steam, so I can use the flesh for applesauce or to mix with yogurt and in salads.

I used steamed apples to make this extremely rich and tasty cream.

To make 2 servings of it, you need:

1 cup ricotta cheese
4 small steamed apples, seeds and peel removed
4 dried figs
drop of natural vanilla extract or 1 cm vanilla bean

Mix all ingredients in a blender and serve with raw nuts or a piece of dried fig on top. You can substitute dried apricots, prunes or dates for the figs and come out with different textures and tastes! This cream is best served on it's own, but can also make a nice crepe filling.

  1. Tasty as usual. I added a little honey too. Although I think I can add Figs next to Dates. Yummy. Excellent candy.
