2 delicious Ricotta breakfasts

What is Ricotta good for? Lasagna? What else? Hard to think of anything, isn't it. Ricotta has pretty dry and unpalatable texture, so most people try it plain and label it inedible. Of course, anything can improve its reputation if used in lasagna, but opening your mind to mixing Ricotta with fruit for breakfast, can actually change your whole opinion about it.

Try these easy recipes and let me know what you think:


You need:
4 oz ricotta cheese
handful blackberries
2 tbsp plain yogurt
1/2 tsp natural vanilla extract
5-6 cut up dried cranberries
5-6 cut up peeled almonds

Mix all and enjoy. If you let it sit in the fridge for an hour the nuts will soften up and taste amazing. You can use blueberries instead of blackberries, it is just as wonderful.


You need:
4 oz ricotta cheese
1 peach, peeled and mashed up
1/2 tbsp honey
dash nutmeg
dash turmeric
5-6 chopped up cashews

Mix all the ingredients and enjoy after keeping in the fridge for 10 minutes.

Simpler than using ricotta in cheesecake, these recipes are wonderful for the summer and allow you to develop them with new fruits and spices for very satisfying meals.
