Mini Nectarine Pancakes

Coming back to Bulgaria I found out that nectarines are a bit early, but clearly the most delicious fruit you can buy at the farmer's market right now. Faithful to cooking what's in season, here are today's simple pancakes.

You'll need:

2 eggs
1/2 cup wheat germ
2 small nectarines
1 scoop protein powder ( I used strawberry, but vanilla would work, too)

Chop up the nectarines and set half of them aside. In a small dish, squeeze the rest of the nectarine pieces lightly, so that you get rid of any excess juice. You will need it later. Add them to the eggs, bran and protein powder and set aside for 10 minutes.

Make 5-6 small pancakes using a pan, lightly brushed with butter.

When ready, stack them, pour the nectarine juice on top and top with the rest of the nectarine pieces.

Enjoy with a cup of yogurt or a yogurt drink.
