Cottage cheese pineapple parfait

Most people have a love-hate relationship with cottage cheese - they love it for a while, eat it all the time, enjoy the benefits of its high protein and low calories and then they get sick of it and swear off buying it for a while. Other people love the taste, but hate the texture - it's too small, it's too large, it's too slimy, it tastes like diet food - I've heard lots of people say those things and never have the chance to include this awesome ''cheese'' in their diets.

This recipe will show you a side of cottage cheese you have not experienced before - a creamy and rich, smooth texture - that's right - smooth. Because you will use a blender to make your breakfast.

Here is what you need:

Serves 2:
2 cups cottage cheese ( I used low fat, the store was out of full fat)
1 cup frozen or fresh pineapple (or other fruit)
5 drops (or 1/2 inch bean)  vanilla extract

In a blender, combine all the ingredients until they get very smooth. Serve in a bowl, decorate with your favorite fruit and enjoy right away!

One serving has only 235 calories and crazy 26 grams of protein.

This technique will also allow you to make savory herb dips for vegetables and toasted pita or lavash chips. Give it a try!

  1. Sounds wonderful! I haven't bought cottage cheese for a while as last time I mixed it with vanilla protein powder and it got disgusting sweet-salty taste. You know that the cottage cheese in Bg is a little bit salty but I thought this would disappear when mixed with something sweet... Well, it actually emphasized the salty taste somehow. Where was my mistake?!

  2. I think protein powder is just too ***** sweet.
    Try adding a bit of yogurt to the mixture and use fruit instead. :)

  4. Thank you - I have frozen pineapples in the freezer and had not come across anything to use them in until now. Here goes!
