Guacamole you can't stop eating

I promised my wonderful client Nicole that I would make guacamole and post the recipe, so she could do it herself. Here it is. Enjoy!

It's easy to make good guacamole, when you have nice ripe avocados. Luckily, it's avocado season in Southern California and everyone is trying to get rid of theirs, so we have plenty lying around. Don't worry if all you have is hard and green ones from the store, you can put them in a plastic bag with an apple and that will ripen them in a few days.

Once the avocados are soft, you can slice them in half and use the soft flesh for guacamole.

To make this almost basic guacamole you need:
2 avocados
juice of 1 lime
1/2 finely chopped onion
pinch sea salt
2 tbsp chopped cilantro
1 small chopped tomato

I have to admit I used slow cooked tomatoes for this recipe and everyone loved it without realizing where the deep smoked tomato flavor was coming from.

You can mash all ingredients together and enjoy with baked tortilla chips or veggies like carrot sticks and celery. Guacamole is amazing as a side for eggs, chicken breast and fresh cheese, like mozzarella and goat cheese.

You can add some cumin to guacamole, if you have sensitive digestion.

You can replace tomatoes with roasted and chopped up peppers and cilantro with parsley.
