If there is a meat that screams boring in the world of health and fitness, it's chicken. It's been pushed as healthy for so long, most people have overconsumed their lifetime allowance of chicken and don't want to hear about it. However, they usually get second helpings of this fruity recipe.
To make you need:
2 chicken breasts
1 tbsp butter
juice of 1 large orange or pomegranate
dash salt
dash pepper
rosemary leaves (thyme)
On medium heat, melt the butter and cook the breasts on both sides until they are white. Season with the salt and pepper. Cook on both sides for 5 more minutes. Pour the fruit juice on top and cover. Cook on both sides for 15 minutes or until the juice has evaporated and caramelized both sides of the breast. Add rosemary to orange or thyme to pomegranate 5 minutes before taking the breast off the heat. Enjoy with green salad and fresh fruit mixed in.
