Parsley Tuna Patties

Whatever the reason you are fed up with canned tuna, here is a solution for you: cook it. Plain water packed tuna fish goes great in recipes with oatmeal and cheese, and to my amazement, even better with parsley and millet.

Here is what you need:

1 cup parsley, finely chopped
4 oz of canned tuna, drained
2 eggs
1/3 cup millet, dry
1/2 tbsp lemon pepper
1/2 tsp sea salt
2 tbsp cream cheese

Mix all ingredients while preheating the oven to 35o F. Make 6-8 small patties and place on an oiled cookie sheet. Bake for 20 minutes and take out of the oven to serve with cream cheese and green salad. You could also use a silicone baking dish, but make sure you remove the patties as soon as you take them out, to prevent moisture from forming between the pan and the bottom of the patties.

They are absolutely delicious warm, but great to pack in a container to take to work, together with some baby carrots. Let me know how yours turned out and maybe if you are adventurous, you could use the same mixture to make a mini tuna loaf.
