Cool Melon Soup

Nothing says summer like this extremely refreshing melon soup. It literally takes 2 minutes to make and it can make a world of difference to your summer dinners.

To make you need:
4 cups honeydew melon, cut up in small cubes
1 cup plain yogurt
1 tbsp coconut cream
2 tbsp mint
1 tbsp anise seed or ajwain seed (I prefer it for the hotter taste)

Blend the melon and yogurt until they are absolutely smooth. Add the herbs and spices and stir.
Serve with a few drops of coconut cream on top. It will harden from the cold temperature and give your guests the surprise chance to taste a drop of coconut, amidst the flavors of mint, anise and melon. For those of you that are more adventurous, you can add half an oz of Ricard or Ouzo to the mixture.

  4. i tried it and it was wonderful and refreshing. treated it more like a drink. didnt have mint, but threw in a bunch of mint soft white candies that i had and threw about 4 tablesppoons of the coconut cream right into the blender. my husband said it tasted like a grasshopper without the alcohol.
